Tumis Labu Siam dan Wortel is a quick and healthy Indonesian stir-fry made with chayote (labu siam) and carrots. Lightly seasoned with garlic, shallots, and optional chilies, this dish brings out the natural sweetness and crunch of the vegetables. It’s a versatile, fiber-rich side dish often served with steamed rice and sambal, perfect for a balanced home-cooked meal.
Peel and julienne the carrots and chayote (labu siam).
Optional: To reduce the slimy texture of chayote, sprinkle it with a bit of salt, rub gently until it releases sap, then rinse and drain.
Heat 0.5 tbsp of cooking oil in a pan over medium heat.
Add the shallots and garlic, and sauté until fragrant and slightly golden.
Stir in the sliced red and green chilies. Cook briefly to release the aroma.
Add the carrots first, stir-fry for about 1–2 minutes.
Then add the chayote, stir-fry for another 3–4 minutes until vegetables are tender-crisp.
Add salt and mushroom stock powder.
Stir well to coat the vegetables evenly.
Add a splash of water if needed to help soften the vegetables slightly.
